VINIFICATION AND AGEING
Hand-picked at the optimum time, the grapes are then destemmed, crushed and converted into wine through a process of careful skin maceration and constant churning during fermentation aimed at producing white wines full of colour and structure, with enough phenolic compounds to support a long ageing in wood.
