This 1988 Dolcetto has developed the mellow charm typical of well-aged Piedmontese reds. The bouquet reveals aromas of dried cherry, cranberry, leather, and subtle hints of violet, almond, and earthy spice. On the palate it is medium-bodied, with softened tannins and gentle acidity, offering flavours of dried red fruit, herbs, and a delicate savoury edge. The finish is smooth and balanced, reflecting the understated elegance of mature Dolcetto.
Serving Suggestions
For optimal enjoyment, stand the bottle upright for 24–48 hours before serving to allow any sediment to settle. Carefully decant the wine to separate it from the sediment. Serve at 16–17 °C (60–63 °F) after decanting for 30–40 minutes to allow the aromas to open fully. Pairs nicely with roasted poultry, mushroom dishes, mild game, cured meats, and aged cheeses such as Castelmagno or Parmigiano Reggiano.
